So you’re sittin’ around your house, craving some chicken, some pasta, some meatballs…but why eat them plain when you can bring them up to restaurant level by adding a sauce that’s simple to make, but complex in flavor?
You want a good spoonful of Vinny Baboole’s mushroom sauce. Creamy and silky, this sauce tastes good on…pretty much everything. Vinnie may not be a chef, not he knows what he likes. Check out his video above to see how it’s made.
Inspired by the Meatball Shop in New York, this sauce is all about adding the separate components and letting them cook down. Getting each step to the consistency you want is more important than exact timing.
- 1/4 Olive oil
- 1 Onion, cut into very thin slices
- 1 1/2 Tablespoons salt
- 1 Tablespoon fresh thyme
- 1 Pound button mushrooms, cut into 1/4 inch slices
- 2/3 Cup dry white wine
- 4 Cup chicken stock
- 4 Tablespoons unsalted butter
- 1/4 Cup flour
- 1/3 Cup chopped flatleaf parsley
- Ground pepper
Heat the oil in a large pan. Add the onions, salt and thyme. Cook for 10 minutes, or until onions are soft and clear. Add mushrooms, and cook until liquid has gone, 10 minutes. Add wine and cook for 5 minutes, until pan is dry. Add chicken stock and cook down for 30 minutes, until liquid is halved.
Combine flour and butter into a paste, and whisk into sauce. Add parsley and pepper. Spoon over anything.
